Coconut Overnight Oats with Berry Compote

Mornings are busy around here. I usually just end up tossing a pot of oats on the stove for Jude while I slice up some avocado for Jack. Oats are such a great vessel for adding bonus superfood ingredients.

My friend, fellow mom of 2 and Holistic Nutritionist over at Insightful Bite, designed this recipe to give a Wildflower spin on regular old oats. It's made the night before, delicious and full of superfood ingredients, using our Berry Radical powder.

What you need:

1 cup rolled oats

3 tablespoons chia seeds

1/2 cup full fat coconut milk (from a can)

1/2 teaspoon vanilla

1 cup almond milk (or other non-dairy milk)

1 1/2 tablespoons Berry Powder

1 tablespoon maple syrup (optional)

dash of cinnamon or ground ginger (optional)

 

To Make:

Mix all ingredients in mixing bowl, tupperware, or large mason jar with a tight lid. Mix well and let sit overnight in the refrigerator. If you want it thinner in the morning, stir in a little almond milk until it gets to your preferred consistency. Top with berry compote and any other toppings you like. Shredded coconut, almond butter, and slice bananas are great!

 

Berry Compote: 

2 cups fresh or frozen berries (any kind or a mix will work!). 

1 Tablespoon maple syrup

1 tablespoon water

1/2 teaspoon vanilla

Combine all ingredients in a small sauce pan over medium heat. As it warm up and the water begins to simmer, stir/smash the berries with the back of a spoon. Keep stirring/smashing until it's reached a gentle simmer, then reduce heat to low. Let cook, stirring often, until it has reduced/thickened into a syrupy consistency. Remove from heat and top overnight oats with a spoonful or two of compote.

Note - This makes about 3/4 cup of compote.
